Spinach & Artichoke Cheese Omelete

Last month we shared a Spinach Artichoke Garlic Grilled Cheese. Today we are sharing a recipe to help use up some of those leftovers! The only thing you need extra for this Left Over Make Over is eggs! 

What you'll need: 
2 Cups or Handfuls of Spinach (we recommend fresh but frozen works also)
7-10 Artichoke Hearts (again from a jar or frozen is fine)
4 Slices of Bread (optional)
Favourite cheese Blend (we used Mozzarella, Parmesan and Cheddar)
4 Eggs
Salt and Pepper to taste


Direction: 
Start by chopping up the Spinach and Artichoke. (Tip: rolling the spinach up will make chopping easier.) Add the chopped vegetables to a mixing bowl. Add in the eggs and whisk. Divide egg mixture into two omelets (one in a frying pan and leaving the other half in the bowl). Flip omelet when edges have browned and the bottom has become solid. Top cooked side with cheese. Hold in half once other half is cooked and serve.
