Today we are doing a Throwback Thursday challenge! This is very simple to do, we are taking old classics like grilled cheese, mac and cheese, meatloaf, and we are reinventing it. Today's challenge is to take a classic and making it into something new and exciting!
To help inspire you today we are sharing our recipe for an out-of-this-world Grilled Cheese. This is basically spinach dip grilled cheese. You take Artichokes, Spinach, and Cheese and you make it into a sandwich!
2 Artichoke Hearts (Pickled or in water)
1/2 cup of Fresh Spinach
Mozzarella Cheese (or your favourite melting cheese)
2 slices light Rye Bread
Mayo
Start by chopping up the artichokes so that they are smaller and more manageable. Fry the spinach until it is wilted. Add artichoke hearts to get warm but not fry.
Meanwhile spread Mayo on the outside of the Rye bread. Place Mayo side down into pan. Add cheese (either shredded or in slices) and top with artichoke and spinach mixture. (Add more cheese if desired.) And place top piece of bread, Mayo side up to the top of your sandwich.
Allow cheese to melt slightly and bottom piece of bread to toast before flipping.
