We are huge fans of chicken! But chicken can be a lot of work sometimes just to get flavor into it. This Lemon Chicken recipe is a great example of simple steps that make a great flavor.
What you'll need:
4-6 Chicken Pieces (Breasts or Thighs)
1 TBSP of Mustard (Yellow or Otherwise)
2 TSP of Italian Spice Mix (or died Oregano and Thyme)
Pinch of Salt (Large)
Pinch of Pepper
2 TBSP of Olive Oil
1 Lemon
1 - 1 1/2 Cups of Chicken Stock
2 Cubes of Prepared Garlic
Roux (equal parts [AP] Flour and Butter)
Directions:
Combine Mustard, Italian Spices, 1 TBSP of Olive Oil, Salt and Pepper in a small bowl. Rub mixture on chicken pieces.
In a hot frying pan combine remaining Olive Oil and Garlic, cook for a few seconds before adding the chicken, skin side down. Flip chicken once it is golden brown. Allow chicken to cook a few moments longer on the flipped side.
To the pan add Chicken Stock and Lemon Juice. Bake in a 400-degree oven for 30 minutes.
Once the chicken is fully cooked, remove from pan. Use the remaining liquid to create juice/sauce.
Juice/Sauce
We recommend serving this chicken with Roasted Potatoes or Pasta. If you choose Potatoes a juice would go well with them and would require a looser juice; if you choose Pasta a sauce would work better and would require a thicker juice.
To remaining liquid add a Roux; the measurements for this will vary depending on thickness required. (Recommendation: 1:1 Teaspoon - Juice; 1:1 Tablespoon - Sauce.)
