Multipurposed Meals Part 2

 Today we are looking at another Multipurpose meal. This time we are looking at Chicken. Last month we talked about how smart it is to buy a whole chicken. And how you can use it in multiple ways. This week we are going to look at that and go even further. So last month we looked at roasting a whole chicken and having that as a meal and then using the leftovers for other things. But you can skip roasting your own chicken if you get the rotisseurie chicken from the grocery store (sometimes they have great sales and you can get 2 for $12!). Once I get home I take the rotisseurie chicken part. I divide it into the bones and the fat (for stock), the skin (works great fried for Salads!), and the meat.


Since Chicken can be used in so many ways, I am just going to talk general today and give some simple recipes I love that you can play around with and enjoy! The first way is pasta. I love throwing chicken into a pasta it just adds a quick protien and it saves time. One of my favourites is Pasta, with Cream of Mushroom Soup, and I mixed in some cooked broccoli and some chicken. I just heat that up and serve (topped with Parmesan cheese if you have it). And it is delicious, made in one pot and it is so quick and easy.



And it is so versital. You can use pesto instead or alfredo sauce, and you can subsitute pasta for israeli couscous or rice even. The next dish I like is sandwiches. It's not hard to make any meat into a sandwich. But chicken isn't often the go to for that. Last month we shared our Pulled Chicken recipe that is served with coleslaw. And there are a number of different ways to use chicken besides that. Another sandwich I love is a Club sandwich. All you need is Bread, Bacon, some leftover Chicken, Lettuce, Tomatoes, and Mayo (although most of that is optional).


And finally, soups. Anything can go into a soup. But Chicken always seems to be the go to for soups. You can find recipes on our website for Twisted Tuscano Soup, Chicken and Rice Soup, and Chicken Noodle! They are all great options to use up leftover chicken! (And you can use the bones to make a broth for the soup too!)
