Freebie Friday - Cabbage Roll Soup

This year we are bringing back our Freebie Fridays!! So every Friday we are going to have a free something. This can be from any art form on our sight. So make sure to keep your eyes peeled for recipes, crochet and knit patterns, and much more! Today we are sharing our Cabbage Roll Soup.

Cabbage Roll soup is a great way to use up left over cabbage. There is always left over cabbage, heads of cabbage are huge! So there is always left over that you are stuck with and there are only so many ways to can use up cabbage. This is also a great way to use up any left over Taco meat and other vegetables.

What you'll need:

2 pounds of Ground Beef

1/2 a head of Cabbage

Taco Seasoning Package (or left over taco meat)

1 Cup of Rice (OPTIONAL)

2 Medium Onions

2 boxes of Chicken Broth (900ml)

8 cups of Water

4 tbsps of Bovril (or bouillon)

1 medium can of Tomatoes

Left over vegetables or vegetables on hand

We used 5 Carrots (chopped), 2 stocks of Celery (diced), 2 cloves of garlic (grated)

Getting Started:

In a large pot you will want to get the vegetables that take longer to cook going first. (This would be the carrots and the celery - make sure to chop them well first). One they have soften slightly, add the chopped cabbage.

To make this a one pot meal, the meat, taco seasoning, chopped onions and grated garlic are all going to be added next. (You can also cook the meat with the onions and garlic and taco mix in a frying pan for faster cooking. If you go this rout you will add the meat mixture once the cabbage has become fragrant and slightly transparent.)

Once both mixtures are ready add them together and mix well. Once everything has reached the same temperature, add the can of tomatoes, the chicken broth and rice. (We used minute rice, but whatever rice you prefer is fine. The trick is to cook the rice first. Once it is fully cooked, and cooled, it will not absorb, the liquid in your soup).

Bring the soup to a boil and let simmer for 1 hour. Once it has add 1 tbsp of Bovril per 2 cups of water added (in this cause 4 tbsp for 8 cups of water). As with most soups the longer it sits the more flavour it will have. Make sure turn the heat as low as possible and to stir occasionally. (NOTE: You may prefer a more tomato flavoured soup, in that cause you would use less Bovril/Bouillon, this is a personal preference and can be done by taste.)
