Today we are looking at one of my favourite pasta salads. This macaroni salad has artificial grab in it, and is very simple. I use canned corn, canned peas and some fresh green onion to give it a little kick, but not to take away from the crab. It goes great as a said, or a light lunch and it is delicious. But today we are going to change things up and make it fresher!
For a fresher macaroni salad, I was inspired by Sushi! Instead of all the canned stuff, we are going to replace that with fresh vegetables like what you would get in a sushi roll.
Sushi Mac Salad
1 Box of Macaroni
1 English Cucumber (Chopped)
1 Cup of Shredded Carrots
1 Avocado (Cubed)
1 Yellow Bell Pepper (Chopped)
Spicy Mayo (or Mayo and Hot Sauce)
Salt and Pepper (To Taste)
Lime or Lemon Juice (Optional)
