Cooking with Your Eyes Challenge - Rainbow!

 For the next few months, we are going on a colourful journey with food. It is no secret that you eat with your eyes. And what that means is, if it looks good or appetizing you are more apt to trying it and enjoying it. So that is going to be our focus on these challenges.


So today we are going for a rainbow challenge. Rainbows are Red, Orange Yellow, Green, Blue, Indigo, and Violet (ROY G. BIV!). The challenge is to make a dish (can be a meal or other), with all these colours.


For an easy challenge, we suggest a salad. It would be very easy to get all these colours in there, some purple cabbage, some "red" onion, and some kale, this is a great way to get some base colours. Also, you can decide on if you want to go sweet (using a lot of berries and the like) or savoury (tomatoes, peppers, etc). It is really easy to find some beautiful colours using fruits and vegetables and most things go well in a salad.


A medium version would be a stirfry. Again as I said, a lot of vegetables come in different colours so it would not be hard to find all these colours, some roasted red onion, sauteed cabbage, some Brussel sprouts or asparagus, some peppers, some tomatoes, it is very easy to find things that go well in a roasted vegetable type dish that meet all the colours.


And finally the hard version. This one can be anything but it has to be a meal. I personally think pasta would be a good choice because you often see a lot of vegetables in them You would have to get creative with the blues and purples here though but an eggplant dish would be a great start!
