Sunday Cooking - Chicken Fajitas

This recipe we are going to use up Left Over Chicken. Chicken Fajitas are really simple to make and can be made in a few different ways. 

What you will need for this recipe is: 
Chicken (Any leftover chicken will do - or a chicken breast per person)
1 package of Taco Seasoning (or make your own)
Cheese (We used a Tex Mex Blend)
Pita Wraps
Peppers (multi-colours or whatever you like)
Onion

OPTIONAL ADD ONs: 
Sour Cream
Tomatoes
Green Onions
Lettuce
Hot Sauce

Step One: 
To start you want to take apart your chicken. We had a rotisserie chicken so we took out the bones and removed the skin. Then we shredded the chicken with our hands (with a fork works fine also). We mixed both white and dark meat together if you prefer one over the other by all means use what you prefer. (We used leftover chicken but if you are using a chicken breast you can slice it into strips if you prefer.) 

If your chicken is already cooked you will start with the vegetables. In a frying pan over medium-high heat, add butter and oil to fry your vegetables (sliced onion and peppers).

Once they are fully cooked (or a little less depending on your preference), add your chicken to heat. Once the chicken is in the pan add the taco pack with the recommended amount of water. Let the water boil out as much as possible.

To Serve: 
You can serve these a few different ways. You can heat the pitas if you like or leave them cold and fill them with the chicken/vegetable mixture and serve so you can make them up in whatever way you'd like. Or you can make the pitas with the chicken/vegetable mixture, add cheese, roll them and heat in the oven before serving.
