Italian Potatoes

Italian Potatoes are super easy to make and give a new twist to the same old potatoes. We used individual spices to make an Italian blend but if you have Italian spice mix or any other spice mix you enjoy by all means use them.

What you'll need:
Potatoes (we used the small potatoes, but you can use rustic potatoes if you prefer)
1/2 tsp of Parsley
1/2 tsp of Rosemary
1/2 tsp of Basil
1 tsp of Thyme
1 tsp of Marjoram
1 1/2 tsp of Oregano
1 tbsp of Butter

We used the small bags of small potatoes so we just gave them a quick rinse before cutting, you may need to wash your potatoes more extensively before using them.

Slice the potatoes to bite-sized pieces (for us this was down the middle; for larger potatoes, this will be in fourths or more). Place them into a casserole dish, a Pyrex pan or roasting pan, whichever you have handy.

Drizzle oil over the potatoes (lightly), and add 1/2 tbsp of butter to each side of the pan.

In a small bowl mix all the spices together and sprinkle generously over the potatoes, mix and add any remaining spices. 

Cook in a 375-degree oven until the potatoes are fork tender (usually 20 - 30 minutes), making sure to mix the potatoes around to keep them from sticking (around the halfway mark).
